Traditional Jonna Rotte (Jowar Roti)


Very popular in villages and small towns as well. Jonna rotte (Jowar Roti) is one of the traditional recipes of India.

Jonna (Jowar) is healthy food. Jonna (Jowar) rotte is best food for diabetic patients and also this roti is good for maintain diet and celiac diseases or digestive problems.

Here is the recipe:
Traditional Jonna Rotte (Jowar Roti)
Ingredients :
  • Jonna pindi  (Jowar Flour) : 2 cups
  • Water : 2 cups
  • Wheat flour for dusting
  • Salt to taste
  • Oil - 2-3tsp
  Special Implements used - puri press or a tortilla maker
  Freshly milled jowar flour yields the best results ...

Method :

Bring the two cups of water to a boil. Add the salt and jowar flour, combine with water by stirring it well. Switch off the heat immediately. Cover with lid and allow it to cool. Knead the dough till soft and divide into balls. Roll out each dough ball into a circle, using wheat flour for dusting. Put the roti on a hot tava , cook for a minute and turn once. Add a little oil around the edges, turn again and fry the other side. When brown patches appear on both sides take into a bowl and cover with a lid immediately.

Continue the process for the rest of the dough. Serve with dal or any curry

Traditionally the farmers eat this with curd ,onion and jaggery.

Kakarakaya curry ( Bitter guard Curry ) ~ Step by Step

Kakarakaya curry/Bitter guard curry Recipe

 Once I tried curry with bitter guard .We were unable to eat that amount of bitterness.So we stopped getting bitter guards for a long time.Few days ago when my husband was not feeling well.I cooked this bitter guard curry.The bitter guard curry is too good there is no bitterness.And my husband took whole rice with that curry only.This curry is one of my favorite dish.

kakarakaya Benefits :

Bitter guard is the least preferred vegetable among many.But the benefits of Kakarakaya / Bitter guard should be taken advantage of and if cooked in right manner bitter guard / kakarakaya is really tasty. Bitter guard /kakarakaya is highly recommended for diabetics.

Learnt From : My Mother

Preparation time : 5 min ; Cooking time : 25 - 30 min  ; Serves : 2 - 4

Ingredients :
  •  Bitter guard - 2
  •  Tomato       - 1
  •  Onion          - small 1
  •  Tamarind paste   - 1 1/2 tablespoon
  •   Cumin seeds      -  1/2 tablespoon
  •   Mustard seeds - 1/2 tablespoon
  •   curry leaves  - 2-3 leaves
  •   Red chilli powder
  •   Coriander powder
  •   Salt    - to taste
  •   Oil     - 4-5 tablespoons
  •   A pinch of hing
  •   Jaggary / Sugar - 1 tsp

  Method : Step by Step


  1. Slightly peel the skin of bitter guard , then clean them with water .Chop them to small pieces,then keep into a small bowl and add 1/2tsp of salt .Mix it with 1 1/2 cup water. put aside for 5 minutes, soak the tamarind in water for sometime. Extract the juice and set aside.

                                                                                                               
 2. Heat oil in a pan and add soaked bitter guard .
 3. And add salt into that and stir for a 5 - 10 minutes , then keep aside. 
                               
                               
                                   
 4. Again heat oil in a pan and add the mustard seeds and cumin seeds. Let them splutter .
 5. Then add the curry leaves and hing (asafoetida) and stir for a few seconds .




6. Add the sliced onions and fry for a second ..
                                          



7. When it turns brown or red ,add the tomato and turmaric and stir for a few minute..
                                          

                                      
8.  And add bitter guard slices and stir for a few minute, then add  red chilli powder, coriander powder,      tamarind juice and water ..
                                         
                                               
  
 9. Let it boil for 10 - 15 minutes, until it looks curry..

                                         


10. Turn off the flame. Serve hot with rice / raggi mudha means raggi balls .

Carrot Halwa Recipe in Indan style

Carrot Halwa is an Indian dessert,made of grated carrot,butter,milkand sugar.This carrot halwa is a very popular in southern india and northern india and is widely knows as Carrot Halwa or Gajar Halwa.This is an easy to cook recipe and does not take much time.

This is delicious and yummy sweet can be served both hot and cold.This is mostly famous in festivals time and ocassional time.

Ingredients :   
  • 2 cups grated carrots (4 - 5 carrots)
  • 2 cups milk
  • 3 - 4 tablespoons butter or ghee or milk khova
  • 1/6 cup sugar
  • 6 chopped roasted cashew nuts
  • 5-6 almonds
  • 6 rasinis
  • 1/2 teaspoon cardamom powder
Method :
  1. Roast the cashew, rasins and almonds and set aside for the garnish
  2. Boil the milk on medium flame in a non stick pan until it is reduced to about to 1 - 1 1/2 cup or boil in microwave up to 3 - 4 minutes.
  3. Melt the butter in a frying pan on medium heat.
  4. Add the grated carrots and stir for about 10 - 12 minutes.
  5. Carrot should be tender and slowly changed in color.
  6. Add the milk and cook until the milk dries..This will take about 10 - 12 minutes.
  7. Next add the sugar and stir-fry for other 4 - 6 minutes,then add cardamom powder ,and stir-fry until the halwa starts to leave the side of frying pan.
  8. Garnish with cashew nuts, raisins and almonds
Tips :

carrot halwa can be refrigerated for up to one to two week and kept in freezer for up to one month.

This simple,old-fashioned cake tastes so good it will surprise you! As i remember my mother delicious meals,this dessert was always the perfect ending. Mom always used "a dash of this and dab of that" to come up with what we thought was "the best"!

Ingredients :

  • Eggs - 3-4
  • Sugar - 11/2 - 2 cups
  • Baking powder - 2 teaspoons
  • All purpose flour - 2 1/2 cups
  • milk - 1 1/2 cup
  • butter - 8 - 10 tablespoons (cubed)
Preparation :

1.Take large glass bowl ,beat eggs for 5 min or until it shows think and lemon coloured .While beating time add sugar,until the mixture is light and fluffy ,then beat vanilla and combine all purpose flour and backing powder,gradually add butter,beat untill smooth.

2.In a small sauce pan,add heat milk and butter just untill is melted .Then add to batter into a pan and mix it.

3. Pour into a greased baking pan.Bake at 350degrees for 35 - 40 minutes or until a toothpick inserted near the center comes out clean.Then cool it .

Yield : 10 - 12 servings
